The color of honey can vary from season to season because of the changing availability of floral sources. Spring honey is usually lightest and the honey we harvest gets darker as the year progresses. We extract our honey as it becomes available, so the colors, and to a certain extent flavors, change throughout the season.
Honey is an absolutely delicious alternative to standard white sugar. It's made by honey bees and is an easy addition to beverages and foods and makes a real difference in the flavor of foods. Baked goods are moister due to the hygroscopic nature (a big word that means it attracts moisture) of honey.
